Ponderings
What I've been pondering....
Spring. Warm Sun. And just a touch of glow on my pasty white skin, that might take my mind off the fact that I've gained 10 pounds and will probably gain at least 20 more in the next 3 months.
A haircut. That I desperately need. From my favorite stylist Ashley Wright at Cline's Salon in Columbia. That might also take my mind off the 10 pounds I've gained and 20 more to come.
My awesome date night with the hubs Monday night complete with Bang Bang Shrimp, Butterfingers and a real movie in the highly overpriced theater.

A Smashing Winter
I've heard a lot of sadness over the lack of winter around these parts, but I'm pretty happy that I can have some comfortable days outside in early February! Addison loves to be outside....

In other news, I made my most exciting Pinterest Project yet. A menu board. I know this doesn't sound all that exciting but it has revolutionized grocery and menu planning. Basically, you write up menus on small pieces of cardstock with ingredients on the back for your shopping list. You have an 11x14 frame, 7 clothespins for each day, and two boxes (band-aid or crayon boxes work great)-- one for all the recipes, and the other to put recipes after you've made them, so you can cycle through the majority of your menus before starting again. I also found a great, easy veggie recipe on http://www.thejoyofcleaneating.com. Buy your favorite veggies and some you don't typically eat. I was trying to add some variety to our usual go-to veggies.
Chop them to one inch cubes (give or take).
Toss them in a ziploc bag with some olive oil and balsamic vinegar.
Spread them evenly on a pan and season with salt and pepper or your favorite seasoning.
Bake at 400 degrees for 25-30 minutes.
Here's the veggies I used, and even the ones I don't normally love were delicious! You can use any veggies you like!
1 Sweet Potato
2-3 Red Potatoes
1 Zucchini
1 Red Onion
Broccoli
Carrots
Brussel Sprouts
Green Pepper
Cherry Tomatoes
They aren't great as leftovers, since they lose that crispy edge warmed over, so next time, I'll probably just do 2 or 3 different veggies at a time/meal since there are only 2.5 eaters in our house.
